Presumably there is an equation that could take a Stirling engine of
a certain size and it would calculate the hp and torque produced from
it. Conversely, there should be a equation to size a Stirling engine
to meet a criteria of 100 hp, and 200ftlbs of torque for instance.
What is that equation or series of equations, and can you recommend
books?

You can use the Beale formula to estimate power to a first approximation. You input the mean engine pressure and the swept volume of the pistons to get the power.
Torque is simply (power)/(2*3.14158*freq), where freq is the engine rotational speed in Hz. If you input power in watts, the torque will be in newton-meters.
