Can anyone give me a reasonable hypothetical ratio for the length to
diameter of an acoustic Stirling engine.

The engines you refer to are known as Thermo-Acoustic engines, made from pyrex test tubes or from 1/2' to 5/8" pyrex or quartz tubing. In general these engines are on the order of 10:1 length/dia plus an allowance for a adjustable/removable end plug for easy access.
